Budgeting and working, budgeting and working. Some days I feel like that’s all I ever do, and lord knows you guys are used to hearing about it! But to raise happy, healthy kids nowadays means we work to care for them, and budget to keep them sprouting!

Working also means that some nights I really need a quick meal, but I try to stay away from too much boxed, preservative laiden stuff. This recipe is a happy medium between the two. Of course there’s ways to do this recipe all from scratch, but even using the couple of easy ingredients I do is delicious and tastes homemade!

What kid would say no to fresh baked garlic knots?

Dirty Spaghetti and Garlic Knots

For the knots:
1/4 cup salted butter
2 tbsp jarred minced garlic
2 tbsp parmesan cheese, grated
1/2 tsp dried oregano
1/2 tsp dried parsley
2 cans of small refrigerated biscuit dough, 10 count each

Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

In a small sauce pan, heat butter and garlic over medium heat until garlic is lightly browned. (Be careful not to burn the garlic!)

In a small bowl, whisk together garlic butter, parmesan, oregano, and parsley. Set aside.

Cut each of the 10 biscuits in half. Roll each piece of dough into a 1/2 inch thin log and tie into a knot. Place knots onto the prepared baking sheet, and spoon the garlic-butter mixture over each knot. Bake until the tops are lightly brown, about 8 minutes. Prepare the sauce while the knots bake.

For the pasta:
1 lb spaghetti or cappelini
1 medium onion, diced
1/2 lb of ground beef

1 14 oz can diced tomatoes, drained
1 14 oz can of plain tomato sauce
1 tsp dried basil
1 tsp dried parsley
1 tsp dried oregano
2 tsp garlic powder
salt to taste

Cook spaghetti according to package directions, drain. In a medium saucepan, brown ground beef and onions until meat is no longer pink and onions are tender, about 5-6 minutes. Add tomatoes, sauce, basil, parsley oregano, garlic powder and salt. Simmer covered approximately 10 minutes. Dish spaghetti out into pasta bowls and top each serving with the sauce. Sprinkle grated parmesan on top.
