Aren’t potatoes such a great vegetable? I think they are. They’re incredibly versatile and can be made into something ANYONE will eat! House loves my whipped mashed potatoes. Seamus adores my homemade hash browns. And Boneses, who hates potatoes altogether, loves these: my perfect hand  cut seasoned fries!

These can be a little labor intensive, but they’re really fun to make and so worth the effort when you’re chowing down on them later. I prefer mine with a little seasoning, which can also be versatile. Here I show you a basic fry seasoning, but when you’re craving something different, try sprinkling Old Bay seasoning on them before baking! They’re also great tossed with dry ranch dressing mix.

The dipping sauce here is ridiculously easy too. It’s one of those, “why didn’t I think of that” simple things, and is a popular sauce in many large chain restaurants. (Like Outback!) The sauce is really great on a burger too, so if you’re making these fries to go with one, try putting this sauce on top!

French Fries and Dipping Sauce

For the fries:

6 large baking potatoes
6 cups water
1/2 cup white sugar
1/4 cup olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 Tbsp salt

Preheat the oven to 400 F. Peel potatoes and slice into wedges.

In a large bowl, mix sugar with the 6 cups water, and add potato sticks. Let soak 15 mins and then drain. Spread the potatoes on a dish towel and pat dry.

In another large bowl, mix the oil, garlic powder, onion powder, paprika, and salt. Add the potatoes and toss to evenly coat with2 the seasoned oil.

Spread the coated potatoes in one layer onto a baking sheet.

Bake for 20 minutes. Flip the potatoes over with a spatula and cook until crisp, about another 20 minutes.

If you wish for crispier fries, place them on the baking sheet under the broiler for 3-4 minutes, or until desired crisp and golden brown. Serve immediately.

For the dipping sauce:

1/2 cup mayonnaise
2 Tbsp ketchup
2 Tbsp prepared horseradish
1/3 tsp paprika
1/4 tsp salt
1/8 tsp dried oregano
pepper to taste

Combine all ingredients. Store covered in the refrigerator.
